SOUS CHEF
Summary/Objective
The primary focus of this position is to team up & oversee all aspects of Back of House operations with the Executive Chef and Director of Leadership (DoL).
Keeping an open ear and eye to all employees and their performance, instructing and educating as needed. From the dishwashers to the line chefs, you will oversee their daily functions along with future hiring of additional culinary staff.
Overview
the human element:
• understand and be able to execute administrative tasks such as ordering to cover vacation time of executive chef
• train, instruct and manage BOH employees; promote continued growth and discipline-with write up or documentation as necessary
• build and strengthen FOH/BOH relations; fine tune knowledge of ingredient lists
• assist in writing annual reviews for all full time BOH employees with executive chef; participate/conduct annual review of all BOH staff under current employee review structure
• report any employee issues; proactive response to conflict, concerns, unhappiness is critical to this position
• attend weekly manager meetings, follow up on any BOH items discussed during that time
• write and post BOH schedules; assist in scheduling of BOH staff for assigned caterings (as applicable) posting bi weekly schedules no later than 5 days prior to start of schedule; create and maintain a regular system/place for employee time off requests.
• hire staff accordingly to keep overtime to a minimum; train new staff members: continue training & development of current staff
• create, maintain & build staff morale; maintain a positive environment squashing any toxic attitudes, language and actions
• Fills to-go orders, if applicable.

menu development:
• collaborating with BOH team on menu development, presenting costed menu to DoL for final approval
• conduct menu tasting meeting with BOH and FOH at least 48 hours before launch
• create menus for in house caterings prepared and/or executed by your location
dollars and cents:
• cost controls: monitoring and preventing waste by finding effective ways to rework product and manage pars
• execute quarterly food, chemical & disposable inventory; submitted to corporate office week after quarter end
• work with executive chef on menu pricing, item costing, catering costs, etc
• keep checkbook/food invoices organized so spending can be properly monitored and cost association
accurate
clean and maintain:
• a clean & sanitary kitchen, prep and dish area; obtain at least a theoretical 98 rating on health department scoring
• create, maintain and execute weekly cleaning schedules of equipment, coolers, etc.
• current servsafe certification at all times
• equipment and have serviced as necessary
communication/organization:
• schedule: coordinate schedule with other BOH leaders to have a MOD scheduled each shift
• respond to emails/slack messages same day (if working) and no longer than 24 hours after receipt unless an away message is up for vacation, market, etc
• working knowledge of microsoft excel, word and google drive software (seek assistance, training if below par)
1618 on location:
• attendance at 1618 on location meetings in regards to furniture market, and any other on location meetings executive chef cannot attend
• team up with executive chef to organize, staff and execute assigned caterings for on location division and report labor and food cost per event by the end of the fiscal week of the event

FLOOR SOMMELIER
Summary/Objective
The primary focus of this position is to act as our on site wine expert and manage wine lists that pair with our food menus yet achieve our costs/profitability. Ultimately, the Sommelier will delight our guests by helping them choose the best wine to complement our fare.
Overview
Responsibilities & qualifications:
● Cost & Inventory management
● Staff Education – with our Certified Sommelier
● On Floor Sales, creating relationships with guests and ensuring the highest service standards
● Work with Lead sommelier & event coordinator on pairings for wine dinners & tastings, two events per year, minimum.
● Maintain a wine list based on guest’s personal tastes, budget, staff input and food choices.
● maintain a balance of price, regions, varietal and style
● Train wait staff on available wines, before they hit the list and guest’s tables, buttons in POS.
● manage book club wine sales; work pickup parties and book club sponsored events.
● Quarterly wine and retail inventory keeping West wine inventory below $30k.
● Maintain and update the retail price list for staff.
● updating the retail storage in the cellar weekly; calling any orders that have been in storage for over 1 month; coordinating delivery or pickup schedules with guests and FOH.
● Working with reps to keep shrinkage at a minimum, keeping up with corked bottles/returns.
● Continue to increase retail wine sales and work with the team to increase their retail sales.
● Work with the beverage team at 1618 West.
● Work with the 1618 book* club team.
● Curate education classes for 1618 Concepts with beverage team. (1 class a quarter, minimum)
● Availability for Cellar shifts off site
Qualifications:
● 1 year prior experience as Sommelier
● Certified Sommelier or WSET 3 knowledge level preferred – this is a service position with a passion for wine.
● Ability to carry up to 30lbs

DISHWASHER
We are looking for a Dishwasher to join our kitchen staff and maintain cleanliness around our restaurant. Ultimately, you’ll help provide an unforgettable dining experience for our customers.
What we Are Looking For:
- Collect used kitchenware from dining and kitchen areas
- Load and unload dishwashing machines
- Wash specific items by hand (e.g. wooden cutting boards, large pots and delicate china)
- Store clean dishes, glasses and equipment appropriately
- Set up workstations before meal prep begins
- Ensure there are always enough clean dishes, glasses and utensils, especially during peak hours
- Maintain cleaning supplies stock (e.g. detergents) and place orders when necessary
- Check washing machines’ operation and promptly report any technical/performance issues
- Remove garbage regularly
- Sanitize the kitchen area, including the floor
Requirements and skills:
